Ingredients
- 2 cups raw rice
- 1/2 cup cooked rice
- 1/4 cup grated coconut
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon active dry yeast
- 1/4 cup warm water
- 1/2 cup coconut milk
- 1/4 cup water
- 2 tablespoons vegetable oil
Instructions
- Soak raw rice in water for 4 hours, then drain.
- In a blender, combine soaked rice, cooked rice, and grated coconut.
- Add sugar, salt, and blend until smooth.
- Dissolve yeast in warm water and let stand for 5 minutes.
- Add yeast mixture to rice batter and mix well.
- Cover and let ferment for 2 hours until bubbly.
- Add coconut milk and water to thin the batter.
- Heat a non-stick pan over medium heat.
- Pour a ladleful of batter and swirl to form a thin circle.
- Cover and cook for 2-3 minutes until edges are crispy.
- Remove from pan and serve hot with coconut chutney.
