Ingredients

  • 4 beef steaks (ribeye, sirloin, or strip steaks), 1 inch thick
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature
  3. Pat steaks dry with paper towels and season both sides with salt and black pepper
  4. Heat olive oil in a large oven-safe skillet over medium-high heat
  5. Sear steaks for 2-3 minutes per side until golden brown
  6. Add butter, garlic, rosemary, thyme, paprika, and red pepper flakes to the skillet
  7. Baste the steaks with the melted butter and herbs
  8. Transfer the skillet to the preheated oven
  9. Bake for 8-12 minutes for medium-rare, or until desired doneness
  10. Remove from oven and let rest for 5 minutes before serving

This method produces perfectly cooked steaks with a beautiful crust and tender interior. The oven finish ensures even cooking throughout the steak.
