
Baleadas Recipe
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 3/4 cup warm water
- 1 cup refried beans
- 1/2 cup queso fresco, crumbled
- 1/2 cup sour cream
- 1/2 cup cabbage, shredded
- 1/4 cup onions, diced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
Instructions
- In a large bowl, mix flour and salt
- Add oil and warm water, mix until dough forms
- Knead dough for 5 minutes until smooth
- Divide into 6 equal portions and roll into balls
- Cover and let rest for 15 minutes
- Roll each ball into a thin circle
- Heat a large skillet over medium-high heat
- Cook tortillas for 1-2 minutes per side until lightly browned
- Warm refried beans in a small saucepan
- Spread beans on each tortilla
- Top with queso fresco, sour cream, cabbage, onions, cilantro, and lime juice
- Fold tortillas in half and serve immediately
