Ingredients

  • 3-4 pounds beef bones (marrow bones, knuckle bones, or oxtail)
  • 2 large onions, quartered
  • 4 carrots, roughly chopped
  • 4 celery stalks, roughly chopped
  • 1 head garlic, halved
  • 2 tablespoons apple cider vinegar
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 1 tablespoon salt
  • 12 cups water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place bones on a baking sheet and roast for 30 minutes until golden brown.
  3. Transfer bones to a large stockpot or slow cooker.
  4. Add roasted vegetables, garlic, apple cider vinegar, bay leaves, peppercorns, and salt.
  5. Cover with water and bring to a boil.
  6. Reduce heat to low and simmer for 12-24 hours, skimming foam as needed.
  7. Strain through a fine-mesh sieve.
  8. Let cool and refrigerate. Skim fat from surface before using.

Special Notes

This nutrient-rich bone broth is perfect for soups, risottos, or sipping on its own. The long cooking time extracts maximum collagen and minerals from the bones. Store in the refrigerator for up to 5 days or freeze for up to 6 months. The apple cider vinegar helps extract minerals from the bones.
