Ingredients

  • 4 beef marrow bones (6-8 inches long)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • 1/4 cup coarse sea salt
  • 1 baguette, sliced and toasted

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Place marrow bones on a baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
  4. Roast for 15-20 minutes until marrow is soft and bubbly.
  5. Remove from oven and let cool slightly.
  6. In a small bowl, mix parsley, chives, capers, and lemon juice.
  7. Sprinkle coarse sea salt on a serving platter.
  8. Place bones on salt and top with herb mixture.
