
Candied Ginger Recipe
Ingredients
- 1 lb fresh ginger root
- 2 cups granulated sugar
- 1 cup water
- 1/4 tsp salt
- 1/4 cup additional sugar for coating
Instructions
- Peel ginger root and slice into thin rounds, about 1/8 inch thick.
- Place ginger in a large pot and cover with water.
- Bring to a boil and cook for 30 minutes until ginger is tender.
- Drain ginger and set aside.
- In the same pot, combine 2 cups sugar, 1 cup water, and salt.
- Bring to a boil and stir until sugar dissolves.
- Add ginger slices and simmer for 45 minutes, stirring occasionally.
- Remove from heat and let cool for 10 minutes.
- Remove ginger slices and place on a wire rack to dry.
- Once dry, roll in additional sugar to coat.
- Store in an airtight container at room temperature.
