Ingredients

  • 4 large eggs
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup pork rinds, crushed
  • 1 tablespoon psyllium husk powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan
  2. In a large bowl, beat eggs until frothy
  3. Add cream cheese and melted butter, mixing until smooth
  4. Stir in salt and baking powder
  5. Add crushed pork rinds and psyllium husk powder
  6. Mix until well combined
  7. Pour batter into prepared loaf pan
  8. Bake for 25-30 minutes until golden brown and firm
  9. Let cool in pan for 10 minutes
  10. Remove from pan and cool completely on wire rack
  11. Slice and serve
