
Carrot Soufflé Recipe
Ingredients
- 2 pounds carrots, peeled and chopped
- 1/2 cup butter, melted
- 1/2 cup sugar
- 3 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 350°F and grease a 2-quart baking dish
- Boil carrots until very tender, about 15 minutes
- Drain and puree carrots in a food processor
- In a large bowl, combine carrot puree with melted butter
- Add sugar, eggs, flour, baking powder, vanilla, salt, cinnamon, and nutmeg
- Mix until well combined
- Pour mixture into prepared baking dish
- In a small bowl, mix brown sugar and pecans
- Sprinkle over the top of the soufflé
- Bake for 45 minutes until set and golden brown
- Let cool for 10 minutes before serving
