Ingredients

  • 2 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon

Instructions

  1. In large saucepan, combine cherries and water
  2. Bring to a boil and simmer for 15 minutes
  3. Add sugar and lemon juice
  4. Cook for 10 minutes until sugar dissolves
  5. Remove from heat and let cool
  6. Puree mixture in blender
  7. Strain through fine mesh sieve
  8. Return to pan and add vanilla, salt, and cinnamon
  9. Simmer for 5 minutes until thickened
  10. Let cool completely
  11. Store in airtight container
