Chicken Inasal Recipe

Ingredients

  • 4 chicken leg quarters
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup calamansi juice
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon annatto powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons oil
  • 1/4 cup chicken fat or oil for basting

Instructions

  1. In a large bowl, combine soy sauce, vinegar, calamansi juice, and brown sugar
  2. Add garlic, ginger, annatto powder, salt, black pepper, and cayenne
  3. Mix well to create marinade
  4. Add chicken and marinate for at least 2 hours
  5. Preheat grill to medium-high heat
  6. Remove chicken from marinade and pat dry
  7. Brush with oil and place on grill
  8. Cook for 20-25 minutes, turning occasionally
  9. Baste with chicken fat or oil during cooking
  10. Cook until internal temperature reaches 165°F
  11. Let rest for 5 minutes before serving
