Ingredients

  • 1 1/2 pounds ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup ketchup
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, milk, egg, ketchup, onion, garlic, salt, pepper, garlic powder, onion powder, and paprika.
  3. Mix gently until just combined.
  4. Shape into a loaf and place in a greased 9x5-inch loaf pan.
  5. In a small bowl, mix ketchup, brown sugar, and mustard.
  6. Spread over the top of the meatloaf.
  7. Bake for 50-60 minutes until cooked through.
  8. Let rest for 10 minutes before slicing.
