
Chilli Oil Recipe
Ingredients
- 1 cup vegetable oil
- 1/4 cup red pepper flakes
- 2 tablespoons Sichuan peppercorns
- 1 tablespoon sesame seeds
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 star anise
- 1 cinnamon stick
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
Instructions
- In small saucepan, heat oil over medium heat
- Add Sichuan peppercorns, star anise, cinnamon, and bay leaf
- Cook for 5 minutes until fragrant
- Remove from heat and let cool slightly
- Strain oil and discard solids
- Return oil to pan and heat to 350°F (175°C)
- Pour hot oil over red pepper flakes
- Add sesame seeds, garlic, and ginger
- Stir in salt and sugar
- Let cool completely
- Store in airtight container

This homemade chilli oil is perfect for adding heat and flavor to dishes. The key is to use the right temperature oil to bloom the spices without burning them. The combination of Sichuan peppercorns and red pepper flakes creates complex heat. This oil can be stored in the refrigerator for up to 3 months. For extra flavor, you can add different spices or herbs. The oil should be completely cool before storing.
