Special Notes

This chipotle chicken al pastor recipe combines the smoky heat of chipotle peppers with the sweet tang of pineapple for an authentic Mexican flavor. The marinade infuses the chicken with complex flavors that are both spicy and sweet. The key is to let the chicken marinate for at least 2 hours to allow the flavors to penetrate. This dish is perfect for tacos, burritos, or as a filling for quesadillas. The pineapple adds a refreshing sweetness that balances the heat of the chipotle peppers. Serve with traditional Mexican accompaniments like lime wedges, salsa, and guacamole.
