Ingredients

  • 2 lbs carrots, sliced into rounds
  • 1 large green bell pepper, diced
  • 1 large onion, diced
  • 1 can (10.75 oz) condensed tomato soup
  • 1/2 cup vegetable oil
  • 1/2 cup white vinegar
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp prepared mustard

Instructions

  1. Steam or boil carrots until tender but still firm, about 8-10 minutes. Drain and let cool.
  2. In a large bowl, combine cooked carrots, bell pepper, and onion.
  3. In a separate bowl, whisk together tomato soup, vegetable oil, vinegar, sugar, salt, pepper, Worcestershire sauce, and mustard.
  4. Pour dressing over vegetables and toss gently to combine.
  5. Cover and refrigerate for at least 4 hours, preferably overnight.
  6. Toss again before serving to redistribute the dressing.
  7. Serve chilled as a side dish.
