Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 2 tbsp butter, melted
  • Oil for frying

Instructions

  1. If using frozen corn, thaw and drain well. If using fresh corn, cook briefly and drain.
  2. In a large bowl, combine flour, cornmeal, Parmesan cheese, baking powder, salt, pepper, garlic powder, and onion powder.
  3. In a separate bowl, whisk together eggs, milk, and melted butter.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Fold in corn kernels and green onions.
  6. Heat oil in a deep skillet or fryer to 350°F.
  7. Drop rounded tablespoons of batter into hot oil.
  8. Fry for 2-3 minutes until golden brown and crispy.
  9. Remove with a slotted spoon and drain on paper towels.
  10. Serve immediately while hot.

Special Notes

These crispy corn nuggets are perfect as an appetizer or side dish. They're similar to hush puppies but with a corn-forward flavor. The key is to not overmix the batter - lumps are okay and will create a better texture. Serve with ranch dressing, honey mustard, or your favorite dipping sauce. For a healthier version, you can bake them at 400°F for 15-20 minutes instead of frying.
