Ingredients

  • 3 pounds beef roast (chuck or rump)
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1/2 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 6 French rolls
  • 6 slices provolone cheese

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season beef roast with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Sear beef on all sides until browned, about 3-4 minutes per side.
  5. Remove beef and add onion, cook until softened, about 5 minutes.
  6. Add garlic and cook for 1 minute.
  7. Return beef to pot and add broth, wine, Worcestershire sauce, soy sauce, thyme, rosemary, and bay leaf.
  8. Cover and roast in oven for 2 1/2 to 3 hours until tender.
  9. Remove beef and let rest for 15 minutes before slicing.
  10. Strain the cooking liquid and skim fat.
  11. Slice beef thinly and place on rolls with cheese.
  12. Serve with warm au jus for dipping.
