
West African Fufu Recipe
Ingredients
- 2 pounds yams or plantains
- 1/2 cup water
- 1 teaspoon salt
- 2 tablespoons butter
- 1/4 cup milk
Instructions
- Peel and cut yams into large chunks.
- Place in a large pot and cover with water.
- Add salt and bring to a boil.
- Cook for 20-25 minutes until very tender.
- Drain and return to pot.
- Add butter and milk.
- Mash with a potato masher until smooth.
- Continue mashing and stirring for 5-10 minutes until very smooth and elastic.
- The mixture should be thick and hold its shape.
- Serve immediately with soup or stew.
