Ingredients

  • 4 large russet potatoes
  • 6 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C)
  2. Cut potatoes into 1/4-inch thick fries
  3. Soak fries in cold water for 15 minutes, then pat dry
  4. Toss fries with 2 tablespoons olive oil, salt, and black pepper
  5. Spread fries in a single layer on a baking sheet
  6. Bake for 20-25 minutes, flipping halfway through
  7. Heat remaining olive oil and butter in a small saucepan
  8. Add minced garlic and cook for 1-2 minutes until fragrant
  9. Remove fries from oven and transfer to a large bowl
  10. Pour garlic butter over fries and toss to coat
  11. Add fresh parsley, Parmesan cheese, and red pepper flakes
  12. Toss again and serve immediately
