Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups gluten-free flour blend
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 375°F and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and both sugars until light and fluffy.
  3. Beat in egg and vanilla extract.
  4. In a separate bowl, whisk together gluten-free flour, baking soda, salt, and xanthan gum.
  5. Gradually add dry ingredients to butter mixture and mix until combined.
  6. Fold in chocolate chips and nuts if using.
  7. Drop rounded tablespoons of dough onto prepared baking sheets.
  8. Bake for 10-12 minutes until edges are golden brown.
  9. Remove from oven and let cool on baking sheets for 5 minutes.
  10. Transfer to wire racks to cool completely.
