
Gnudi Recipe
Ingredients
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup semolina flour
- 2 tablespoons butter
- 1/4 cup sage leaves
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large bowl, combine ricotta, Parmesan, eggs, flour, salt, black pepper, and nutmeg
- Mix until well combined and smooth
- Cover and refrigerate for 30 minutes
- Dust a baking sheet with semolina flour
- Form ricotta mixture into small balls using a spoon
- Roll each ball in semolina flour
- Place on prepared baking sheet
- Bring a large pot of salted water to a gentle boil
- Cook gnudi for 3-4 minutes until they float to the surface
- In a large skillet, melt butter over medium heat
- Add sage leaves and cook until crispy
- Add gnudi and toss gently
- Serve with additional Parmesan cheese
