
Gumbo Greens Recipe
Ingredients
- 2 pounds collard greens, chopped
- 1/4 cup vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh parsley
Instructions
- In a large pot, heat oil over medium heat
- Add onion and garlic, cooking until softened
- Add flour and cook for 2 minutes
- Gradually add chicken broth, stirring constantly
- Add collard greens and bring to a boil
- Reduce heat and simmer for 30 minutes
- Add vinegar, brown sugar, salt, and peppers
- Simmer for 15 minutes until greens are tender
- Garnish with fresh parsley
- Serve hot
