Ingredients

  • 8 cups chicken broth
  • 4 cups water
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, cut into 2-inch pieces
  • 1/4 cup dried shiitake mushrooms
  • 1 tablespoon Sichuan peppercorns
  • 2 star anise
  • 1 cinnamon stick
  • 1/4 cup gochujang
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Instructions

  1. In a large pot, combine chicken broth and water
  2. Add soy sauce, rice wine, and sesame oil
  3. Add garlic, ginger, and green onions
  4. Add dried mushrooms, Sichuan peppercorns, star anise, and cinnamon stick
  5. Bring to a boil, then reduce heat and simmer for 30 minutes
  6. Add gochujang, sugar, and salt
  7. Simmer for 15 minutes until flavors meld
  8. Strain broth and discard solids
  9. Return broth to pot and keep warm
  10. Serve with your favorite hot pot ingredients
