Ingredients

  • 2 pounds pork belly, cut into chunks
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh cilantro

Instructions

  1. Season pork belly with salt and pepper
  2. In large pot, combine soy sauce, vinegar, and brown sugar
  3. Add pineapple juice, onion, garlic, and ginger
  4. Add bay leaves and red pepper flakes
  5. Add pork belly and bring to a boil
  6. Reduce heat and simmer for 2 hours
  7. Cook until pork is tender and sauce is thickened
  8. Garnish with fresh cilantro
  9. Serve hot with rice
