Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder

- 2 large eggs
- 1 1/2 cups milk

Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt
- In a separate bowl, beat eggs with milk, melted butter, and vanilla
- Add wet ingredients to dry ingredients and mix until just combined
- Heat a griddle or large skillet over medium heat
- Pour 1/4 cup batter for each pancake
- Cook until bubbles form on surface, about 3 minutes
- Flip and cook until golden brown, about 2 more minutes
- Remove pancakes and keep warm
- In the same pan, cook scrambled eggs
- To assemble: place cheese on one pancake, top with bacon and eggs, then second pancake
- Serve immediately while warm
