  • 4 cups corn kernels (fresh or frozen)

  • 1/2 cup queso fresco, crumbled
  • 1/4 cup cotija cheese, grated
  • 1 jalapeño pepper, seeded and diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 375°F
  2. In a large bowl, combine corn, mayonnaise, and sour cream
  3. Add queso fresco, cotija cheese, jalapeño, and red onion
  4. Stir in cilantro, lime juice, and all seasonings
  5. Mix well until all ingredients are combined
  6. Transfer to a baking dish
  7. Bake for 20 minutes until hot and bubbly
  8. Remove from oven and let cool slightly
  9. Garnish with additional cilantro and cheese
  10. Serve warm with tortilla chips
