Ingredients

  • 2 cups roasted peanuts
  • 1 cup chocolate chips
  • 1/2 cup butterscotch chips
  • 1/4 cup peanut butter
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper
  2. In a double boiler, melt chocolate chips and butterscotch chips
  3. Stir in peanut butter and butter until smooth
  4. Remove from heat and add vanilla extract and salt
  5. Stir in roasted peanuts until well coated
  6. Drop spoonfuls of the mixture onto prepared baking sheet
  7. Let cool at room temperature for 30 minutes
  8. Refrigerate for 1 hour until firm
  9. Store in an airtight container at room temperature
