Ingredients

  • 1 pound fresh okra
  • 2 cups white vinegar
  • 2 cups water
  • 1/4 cup salt
  • 2 tablespoons sugar
  • 4 cloves garlic, minced
  • 2 teaspoons dill seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes
  • 4 bay leaves

Instructions

  1. Wash okra and trim stems.
  2. In a large pot, combine vinegar, water, salt, and sugar.
  3. Bring to a boil and stir until salt and sugar dissolve.
  4. Pack okra into 2 clean pint jars.
  5. Add garlic, dill seeds, mustard seeds, red pepper flakes, and bay leaves to each jar.
  6. Pour hot brine over okra, leaving 1/2 inch headspace.
  7. Remove air bubbles and wipe rims.
  8. Seal jars and process in boiling water for 10 minutes.
  9. Let cool and store in a cool, dark place for at least 2 weeks before eating.
