Special Notes
This pompano recipe showcases the delicate flavor of this prized fish. The key is to cook the fish quickly over high heat to keep it moist and tender. The lemon and caper sauce adds brightness and tanginess. This dish pairs perfectly with rice or roasted vegetables. For the best results, use fresh pompano and don't overcook it. The fish should flake easily when done.
