Ingredients

  • 3 pounds pork belly, cut into 1-inch cubes
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat smoker to 225°F (110°C).
  2. In a large bowl, mix brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne.
  3. Toss pork belly cubes with spice mixture.
  4. Smoke for 2 hours until internal temperature reaches 165°F (74°C).
  5. Remove from smoker and place in a foil pan.
  6. In a small bowl, mix BBQ sauce, honey, vinegar, and Worcestershire.
  7. Pour sauce over pork belly and toss to coat.
  8. Return to smoker and cook for 1-2 hours until caramelized.
  9. Remove from smoker and let rest for 10 minutes.
  10. Serve immediately.
