Ingredients

  • 4 pork shanks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1/2 cup red wine
  • 2 tablespoons olive oil
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley

Instructions

  1. Season pork shanks with salt and pepper
  2. Heat oil in large pot over medium-high heat
  3. Add pork shanks and cook until browned
  4. Remove pork and set aside
  5. Add onion, garlic, carrots, and celery
  6. Cook until vegetables are softened
  7. Add tomatoes, broth, and wine
  8. Return pork to pot
  9. Add thyme, rosemary, and red pepper flakes
  10. Bring to a boil, then reduce heat and simmer
  11. Cook for 2 1/2 hours until pork is tender
  12. Garnish with fresh parsley
