
Pork Stew Recipe
Ingredients
- 2 pounds pork shoulder, cut into chunks
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 2 celery stalks, diced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 tablespoon flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh parsley
Instructions
- Season pork with salt and pepper
- Heat oil in large pot over medium-high heat
- Add pork and cook until browned
- Remove pork and set aside
- Add onion and garlic, cooking until softened
- Add carrots, potatoes, and celery
- Stir in tomatoes and broth
- Return pork to pot
- Add thyme, rosemary, and red pepper flakes
- Bring to a boil, then reduce heat and simmer
- Cook for 1 1/2 hours until pork is tender
- Garnish with fresh parsley
