Ingredients
- 1 rack of pork (6-8 ribs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced

Instructions
- Preheat oven to 400°F.
- Score the fat cap of the pork rack in a diamond pattern.
- In a small bowl, mix olive oil, garlic, rosemary, thyme, mustard, brown sugar, salt, black pepper, and cayenne pepper.
- Rub the mixture all over the pork rack.
- Place pork in a roasting pan, fat side up.

- Continue roasting for 1 hour 10 minutes until internal temperature reaches 145°F.
- Remove from oven and let rest for 15 minutes.
- While resting, make pan sauce by deglazing with white wine and chicken broth.
- Add butter and whisk until smooth.
- Slice between ribs and serve with pan sauce.
