Ingredients
- 2 pounds small new potatoes
- 1/2 cup kosher salt
- 6 cups water
- 4 tablespoons butter, melted
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon black pepper
Instructions
- Wash potatoes thoroughly and pat dry
- In a large pot, bring water and salt to a boil
- Add potatoes and return to a boil
- Reduce heat and simmer for 15-20 minutes until tender
- Drain potatoes and return to pot
- Add melted butter and toss to coat
- Season with black pepper and fresh parsley
- Serve immediately while hot
