Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup cold butter, cubed
  • 1/2 cup cold water
  • 1 tbsp olive oil
  • 1 egg white, beaten
  • Coarse sea salt for sprinkling

Instructions

  1. Preheat oven to 400°F and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, salt, and baking powder.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Add cold water and olive oil. Mix until dough comes together.
  5. Turn dough onto a floured surface and knead gently 4-5 times.
  6. Divide dough into 4 equal pieces.
  7. Roll each piece very thin (about 1/8 inch thick) on a floured surface.
  8. Cut into 2-inch squares using a pizza cutter or knife.
  9. Place crackers on prepared baking sheets.
  10. Prick each cracker several times with a fork.
  11. Brush with beaten egg white and sprinkle with coarse sea salt.
  12. Bake for 12-15 minutes until golden brown and crisp.
  13. Cool completely on wire racks before storing.
