Ingredients

  • 1 pound thinly sliced beef
  • 1/2 head napa cabbage, chopped
  • 1 bunch spinach, trimmed
  • 1 package enoki mushrooms
  • 1 package shiitake mushrooms
  • 1 block tofu, cut into cubes
  • 1 bunch green onions, cut into 2-inch pieces
  • 1 carrot, sliced
  • 1 daikon radish, sliced
  • 8 cups dashi stock
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Ponzu sauce for dipping
  • Goma sauce for dipping

Instructions

  1. Prepare all vegetables and arrange on platters
  2. In a large pot, combine dashi stock, soy sauce, mirin, sugar, and salt
  3. Bring to a boil and reduce heat to simmer
  4. Place pot in the center of the table
  5. Each person cooks their own ingredients in the hot broth
  6. Dip meat and vegetables briefly in the broth
  7. Cook until just done, about 30 seconds to 2 minutes
  8. Dip cooked items in ponzu or goma sauce
  9. Continue cooking and eating until all ingredients are used
  10. Serve the remaining broth as soup at the end
