Special Notes
Sponge candy is a unique confection that has a light, airy texture similar to a sponge. The baking soda creates bubbles that give the candy its characteristic texture. The key is to work quickly once the sugar mixture reaches the right temperature, as it will start to set immediately. The chocolate coating adds richness and helps preserve the candy. This recipe requires a candy thermometer for best results. The candy is best stored in a cool, dry place and will keep for several weeks. You can customize the flavor by adding different extracts or spices to the sugar mixture.
