Ingredients
- 6 large potatoes, peeled and diced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese

Instructions
- Boil potatoes until tender, then drain
- In saucepan, melt butter over medium heat
- Add flour and cook for 2 minutes
- Gradually add milk, stirring constantly
- Add cheese and stir until melted
- Stir in sour cream and seasonings
- Add potatoes and mix gently
- Transfer to greased baking dish
- Bake at 375°F (190°C) for 30 minutes
- Garnish with green onions and bacon
