Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sour cream

Instructions

  1. Heat olive oil in a large pot over medium heat
  2. Add onions and cook until softened
  3. Add garlic, celery, carrots, and bell pepper
  4. Cook for 5 minutes until vegetables are tender
  5. Add diced tomatoes and chicken broth
  6. Bring to a boil and reduce heat to simmer
  7. Add black beans, kidney beans, and corn
  8. Season with cumin, chili powder, salt, and black pepper
  9. Simmer for 20 minutes until flavors meld
  10. Stir in fresh cilantro
  11. Serve hot with a dollop of sour cream
