
Swamp Soup Recipe
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 green bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream
Instructions
- Heat olive oil in a large pot over medium heat
- Add onions and cook until softened
- Add garlic, celery, carrots, and bell pepper
- Cook for 5 minutes until vegetables are tender
- Add diced tomatoes and chicken broth
- Bring to a boil and reduce heat to simmer
- Add black beans, kidney beans, and corn
- Season with cumin, chili powder, salt, and black pepper
- Simmer for 20 minutes until flavors meld
- Stir in fresh cilantro
- Serve hot with a dollop of sour cream
