Ingredients

- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon ube extract
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans
- In a medium bowl, whisk together flour, baking powder, and salt
- In a large bowl, beat ube halaya, ube extract, sugar, and oil until smooth
- Add eggs one at a time, beating well after each addition
- Mix in coconut milk and vanilla extract
- Gradually add flour mixture, mixing until just combined
- Add purple food coloring if desired for deeper color
- Divide batter between prepared pans
- Bake for 30-35 minutes until toothpick inserted comes out clean
- Cool in pans for 10 minutes, then remove to wire racks
- For frosting, beat butter until creamy, then gradually add powdered sugar
- Add heavy cream and ube extract, beating until smooth
- Frost cooled cake layers and serve
