Ingredients
- 3 cups cooked jasmine rice, chilled
- 3 large eggs, beaten
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 4 green onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon white pepper
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat 1 tablespoon oil in large wok over high heat
- Add beaten eggs and scramble until set
- Remove eggs and set aside
- Add remaining oil to wok
- Stir-fry garlic and ginger for 30 seconds
- Add carrots and peas, cooking for 2 minutes
- Add chilled rice and break up clumps
- Stir-fry for 3-4 minutes until heated through
- Add soy sauce, oyster sauce, and sesame oil
- Return scrambled eggs to wok
- Add green onions and white pepper
- Toss everything together and serve hot
