Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Line muffin tin with paper liners
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt
  4. In a separate bowl, beat egg with milk, oil, and vanilla
  5. Add wet ingredients to dry ingredients
  6. Mix until just combined (batter will be lumpy)
  7. Fill muffin cups 2/3 full
  8. Bake for 18-20 minutes until golden brown
  9. Cool in pan for 5 minutes
  10. Remove to wire rack
  11. Mix powdered sugar with milk for glaze
  12. Drizzle over cooled muffins
